What is your favourite part of being involved with the Lovedale Long Lunch?

Being able to lead my team of Chefs in a different & challenging environment, also giving them the experience to cater for a large event.

What factors do you take into account when creating a menu for an audience of this size?

Choosing dishes that I can serve in large scale that present well, taste delicious & compliment Emma’s Cottage Wines.

What dish are you most excited about this year and what was your inspiration when creating it?

The Sri Lankan chicken curry- It is an Amanda’s On The Edge institution.

If you could take credit for one great classic recipe, which would it be?

Crab & snapper filled ravioli with champagne butter sauce.
