What is your favourite part of being involved with the Lovedale Long Lunch?

It's a great team building weekend for staff and I enjoy seeing the crowd having a wonderful experience.

What factors do you take into account when creating a menu for an audience of this size?

Time of the year eg. Climate. Considering what the bulk audience are looking for on the day. Something substantial, flavoursome.

What dish are you most excited about this year and what was your inspiration when creating it?

Pina colada parfait – it's a great tropical dessert for a fun weekend.

If you could take credit for one great classic recipe, which would it be?

The chicken schnitzel. Everyone loves a good chicken schnitzel.

Who in history would you most like to have prepared a meal for?

Paul Bocuse. The god father of French cooking.
